Porkapalooza is a BBQ competition sanctioned by the Kansas City Barbeque Society (KCBS).

What happens at Porkapalooza?

Porkapalooza is a two-day festival with optional categories (Kids’ Cook Que and a Chef Challenge) on Saturday and traditional KCBS categories (Chicken, Ribs, Pork, Beef Brisket) on Sunday. 

KCBS categories are not optional, and all teams must compete in all KCBS categories or else risk disqualification. 

Most competitors arrive on-site for set-up on Friday evening or early Saturday morning and will be asked to remain on-site until Sunday evening when the competition results have been compiled.


How does the judging work?

Every KCBS judge’s table includes six certified judges. Individual Styrofoam boxes with each competitor’s entry are passed around the table. Judges have a few seconds to rank the appearance of the meat on a scale from 5 to 9. If you break a rule, they will give you a penalty score of 1.
